Authentic Rustic Spinach Pie with Handmade Phyllo Dough 


Ingredients 
For phyllo dough 
 
1 lb all purpose flour 
8 oz warm water 
2 oz or 4 table spoon olive oil 
2oz or 4 table spoon white vinegar 

For the pie 
 
1.5  lb fresh spinach 
1 lb feta cheese 
1/2 lb ricotta cheese   
1 cup fine chopped parsley 
1 cup fine chopped dill 
1 cup fine chopped scallions 
4 eggs 
2 stick room temperature batter 
1 cup olive oil for brushing the pie 
1/2 lb flour extra (non stick reasons )

Tools 
1 sheet pan half size 
1 Brush 
1 Wooden Pastry roller
